Even though we have two young kids, Ed and I try and fit in dinner together once a month. Alone. Whether we’re eating in or out, pasta is usually on the menu because it’s one of Eds favourites and if there are any leftovers, The Kids happily make short work of them.
This months date night was a little tricky. What made it interesting was that Ed was in Ottawa and I was in Mexico. Even so, we weren’t going to let a little distance of 5,000km keep us apart.
As usual, Ed offered to cook. While I don’t mind cooking and cleaning for my family, I appreciate the change in routine and Ed is really great at throwing something tasty together. Case in point…
Olivieri Pasta Spinach and Cheese Ravioli was on the Menu.
He confessed that he wanted to find the heart shaped Ravioli that is currently available, for a limited time, but the Sobeys he went to didn’t have it. Instead, he did what he does best and improvised.
He chose one of the new Romantic Recipes, Olivieri Ravioli Hearts with Brown Butter Sauce and substituted the Spinach and Cheese Ravioli and added garlic, tomatoes and mini sweet peppers. With only 5 minutes for prep and 10 minutes to cook, this healthy meal is perfect for the whole family. Especially if we’re short on time.
A Few Cooking Tips: Watch the butter closely because it will burn and toss the pasta with a bit of olive oil while it’s sitting (and the sauce is cooking) or the ravioli will stick together.

Normally when I have pasta, it’s just macaroni with spiced, diced tomatoes and grated cheese spread over it.
Maybe I’ll get adventurous and try Ed’s.

We love Olivieri tortellini in this house! Hubby makes a great rosé sauce and the kids love to add ‘shaky cheese’ aka parmesan on top! Romantic Dinner Date is not a phrase I am familiar with. :S

That looks delish. My most romantic date was on my honeymoon. We are driving up through the mountains to Cortina in northern Italy. We stopped at a small restaurant for lunch. The owner said they were not open, but opened just for us. We had a lovely meal sitting outdoors looking at the mountains around us and thinking Life is Good, and this is just the beginning. More than 21 years later Life is Still Good!
I forgot that I put chopped raw onions in my macaroni.

This recipe looks delicious (you have such a great hubby!!) I love love their tortellini – we grew up on it! My Dad would make a tortellini salad with it (which I hog completely) and a delicious pasta in a red pepper and cream sauce! Honestly the best tasting pasta out there (especially when you’re looking for fresh!) to answer your question though we haven’t had a date night in forever (let alone at home!!) I would love for my hubby to whip something like this up for us and have some candles! I can dream right? 🙂
Seriously, I’m sure we’ve had romantic dinners. I know we have. But it’s been so long I honestly don’t remember when the last one was. I’m ok with that. I’m a big fan of family meals and Olivieri is a regular in our house. It cooks up so much quicker than dry pasta and we love the variety. Spinach and cheese is actually one of our favorites. I also have to be careful with packaged food and sauces because I’m very sensitive to MSG. Olivieri is on my approved list 🙂
