Manage your Sugar Intake by Baking with @Almond_Fresh #SkipTheSugar

Almond Fresh LogoAccording to Statistics Canada, sugar consumption in Canada is at an all-time high. The average Canadian consumes 26 teaspoons of sugar per day. When you add it all up, that’s 20 bags of sugar per year. It’s no wonder that as a nation we have issues with obesity and diabetes.

Since I’m hypoglycemic, I’ve always watched my sugar intake and as a parent, encouraging The Kids to make healthy food choices is at the top of my list. While “everything in moderation” is my theory to life, that goes out the window every Summer when we visit the Farm. You see, Aunt Sally is an avid baker so that means blueberry crumble, cookies, cakes and/or biscuits at every meal. The calories and sugar consumption can add up, but this year, I came prepared…

We were going to bake with Almond Fresh Beverage.

Almond Fresh Unsweetened

Almond Fresh is one of the products offered by Earth’s Own Food Company Inc, a Canadian company based in British Columbia. The beverage is Made in Canada, GMO-free, gluten free, lactose free, kosher and fortified with 9 essential vitamins and minerals. Refreshing, real nutty taste and all the benefits of nutrient dense real California almonds.

Diana Steele, a Canadian registered dietitian provides the following tips for reducing sugar consumption among Canadian adults;

— Reduce or eliminate sugar sweetened beverages.
— Skip sugary ingredients.
— Say no to candy and chocolate.
— Add nutrients, not calories.
— Cook together and make choices as a Family.

With these tips in mind, we decided to pull out Aunt Madges* best china set and have ourselves a little tea party by baking some of these quick and easy rich tea biscuits using Almond Fresh.

Almond Fresh Tea Biscuits

Ingredients:
2 cups All-purpose flour
2 tbsp Granulated sugar
1 tsp Salt
4 tsp Baking powder
½ tsp Cream of tartar ½ tsp
½ cup Butter or Margarine (cold)
¾ cup Almond Fresh-Unsweetened (cold)**

Directions:
Combine first 5 ingredients in bowl. Stir thoroughly. Cut in butter until crumbly. Pour in Almond Fresh Unsweetened. Stir quickly to combine.

Dough should be soft. Turn out on lightly floured surface. Knead gently 8-10 times. Roll or pat ½ to ¾ inch (2 cm) thick or half the thickness you want the baked product to be. Cut with small round cookie cutter and place on greased cookie sheet.

Bake at 425 for 12-15 minutes. Brushing biscuits with milk before baking will produce a slightly brown top. Makes 10. Let cool for a few minutes and serve warm with a dollop of clotted cream or in our case, fresh homemade rhubarb jam. Life on the Farm is good.

After I filled myself full of delicious and low sugar tea biscuits, which Aunt Sally said were way flakier than the ones she makes with cow’s milk, I got to thinking about all the other ways that I could incorporate Almond Fresh into our meals; smoothies, cereal, pancakes, quiche, macaroni and cheese, mashed potatoes or even add it to a can of Campbell’s soup when you’re short on time. ** Note that I used the Unsweetened flavour to bake with because it only has 35 calories per serving. However, when I’m looking for a cold glass of something to drink, I choose their Original flavour. With only 60 calories, it fills me up full and tastes richer. I’ve been a fan long before I ever had a blog.The recipe we used was from “Companys Coming. Muffins & More” by Jean Paré (1994) with a few adaptations.
