For the second time this week, my family told me that the kitchen smelled amazing. To top it off, The Kids thanked me for cooking and I didn’t have to offer them money to say it. No, I didn’t make another batch of Chicken Penne in a Rosé Sauce (although I could have because I had all the fixings), so, what was all the excitement about?
I stumbled on this quick and easy recipe for Chicken Caesar Tortilla Pizza on the Appehtite website. Speaking of which, if you haven’t checked out this website, you really should. They have recipes from breakfast to dessert and everything in between made by people like you and I. Well, you more than I but you get what I mean.
So the other night, at 8pm when everyone was tired and hungry, I decided to make it. Naturally I had their Maple Leaf Prime Chicken Strips and Bacon but not the ever so rare “caesar salad dressing” so I used salsa sauce instead. Then I added whatever I had in the fridge including cilantro and called it…
Chicken and Bacon Mexican Tortilla Pizza
Ingredients
- 4 Dempsters 10" Original Tortillas
- 150g Maple Leaf Prime Oven Roasted Chicken Breast Strips -- Sweet Thai Chili (Cut in half lengthwise)
- 4 Slices of Bacon (Cooked)
- 4 Tbsp Salsa
- 250ml Old Cheddar or Mozzarella (Grated)
- 2 Plum Tomatoes (Sliced Thin)
- 1/2 Onion (Sliced Thin)
- Handful of Cilantro (Whole, Not Chopped)
- Handful of Parmesan Cheese (Grated)
Instructions
- Preheat the oven to 375°F
- Put 1 Tbsp of salsa on each tortilla and then evenly place 1/4 of the ingredients on each. Let the kids make them. Ours did!
- Place on a cookie sheet and bake for 10 minutes. Less is more if you ask me.
- Cut and serve.
Notes
Note that during the cooking process, the tortillas shrunk less than a 1/4 in size.
Next time I will make two pizzas for each adult and 1.5 for each of The Kids.
It was a hit. A huge hit. I’m going to have to start thinking outside the pizza box more. Maybe some turkey wraps with Thanksgiving leftovers?
Given all my culinary creativeness this week, I figured that I wouldn’t look like a one trick pony if I once again cooked up a family favourite, the egg burrito. Only this time, there was a really big twist… Dempsters Corn Tortillas.
We eat corn tortillas every day in Mexico. They are a staple in our diet there and now will be here in Canada too. Each package contains six tortillas and I managed to make them last two whole days. Maybe Max will share one of them with us next time. Serve them with pineapple like I did or your favourite fruit. Check out the link above for details and have fun!

I LOVE an egg burrito, but so rarely see corn tortillas at my local store. I will have to check more closely this weekend to see if I can find Dempster’s corn tortillas! We also have tortilla pizza about once per week – it’s so fast!!

I’ve only seen Corn Tortillas once in Ottawa (and I can’t remember where!?) and at the one and only tortillaria in Canada (last time I checked) in Toronto. We have pizza at least once a week only now it will be fresh and not from a box.
