I’m a Mother, that’s busy with two young kids, two dogs and a work-at-home-husband. At the end of a long day, all I want is to feed my family a meal that is quick and nutritious. Serving a hot and/or cooked meal that doesn’t come from a box is an added bonus. So, when I was asked to show you what I can do in the kitchen with Maple Leaf Prize Fully Cooked Chicken Strips, I knew that I had to pull out all the stops.

I could have taken the easy way out and just added their chicken strips to a pizza or salad. Which would have been fine and tasty but I wasn’t going for fine. Or, burn things so badly (the one and only time that I BBQd) so that no one would want me to cook again (similar to the red sock in the white wash). But no, I had high hopes for tonights dinner. The term “Go Big or Go Home” kept coming to mind. So, I cooked. Unfortunately, it was a success. It was a huge success.

Why do I say unfortunately? Tonight’s dinner tasted so great that The Kids want to eat it every day. Which isn’t surprising because everyone is a huge fan of pasta and chicken. The reason why I will do it again is because for once, dinner was hot and on the table in less than 15 minutes. I would have taken pictures of smiling and dirty faces but it all happened so fast. What had everyone so happy? A little something that I call…

Chicken Penne in Rose Sauce with Vegetables and Goats Cheese

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Servings: 2 Adults and 2 Kids

Chicken Penne in Rose Sauce with Vegetables and Goats Cheese

Ingredients

  • 200g Maple Leaf Prime Oven Roasted Chicken Breast Strips -- Sweet Thai Chili (Cut in half lengthwise)
  • 300g Pasta
  • 1 cup Broccoli (Diced - small)
  • 1 cup Red Pepper (Diced - small)
  • 2 plum Tomatoes (Diced - small)
  • 1.5 cups Pasta Sauce (Flavoured or Spiced)
  • 2 Tbsp Crushed Garlic
  • 100 g Goats Cheese (Sliced)

Instructions

  1. Cook the Pasta the way you like it (10 minutes from start to finish)
  2. At the same time, turn on the element to medium and put the pasta sauce and vegetables into a pot. Heat for 5 minutes, stirring occasionally.
  3. Add the Chicken Strips and Goats Cheese. Stir for a few more minutes.
  4. Strain the pasta. Rinse under cold water (briefly). Add a dollop of olive oil.
  5. Pour the pasta sauce over the pasta and serve.

Notes

The Sweet Thai Chili sauce that came on the chicken was a bit spicy. I'd compare it to a Medium Salsa. The Kids are used to spicy foods so it didn't bother them much but I can imagine some kids wouldn't like it.

I also forgot to add any spices! You couldn't tell because the Sweet Thai Chili came with it's own great taste. Had I remembered, I would have added crushed garlic because, well, I add garlic to everything.

In case you didn't realize it, these chicken strips were purchased fully cooked! That saved a lot of time and stress for me.

This is the first time that I've ever written down a recipe so keep that in mind 🙂

The original recipe is courtesy of Cathy’s Mother in Law. However, when it came time to cook, I couldn’t find the recipe so I figured I’d wing it. I mean, we all know how good I am at substituting ingredients. The best part is that I “hid” three vegetables in the sauce and served it with garlic bread (another first) so that The Kids could soak up every last morsel. I love that the product is has NO added preservatives and all natural ingredients including honey and cane sugar. And, it comes in a variety of flavours; Italian Style, Sweet Thai, and Plain (as well as in Turkey). The sad part is that there aren’t any leftovers.

I will definitely be making this meal again. In fact, now that I have my feet wet, I think that I’ll try a #Dinnerin15 recipe from the Appehtite website like this Chicken Ceasar Pizza seeing as I have tortillas on hand. What’s the worst that can happen? A blog post perhaps.

    There is nothing more satisfying then everyone saying that the meal you prepared was so good that they want you to do it again. The pictures sure look appetizing. Pasta is my comfort food and chicken is one of my favourites

    This looks so good! We’d all eat this…no problem! My mom used to make us a very simple and fast meal. She would take Campbell’s Vegetable Soup and mix it with ground beef and basically simmer it until it was done. She would servie it over rice, potatoes or even toast! We loved it and now that she’s gone we talk about her every time we have it for dinner!

    Mmmm…. goat cheese and rose sauce. What a fantastic combination, especially with chicken! I bet it would be delicious with a spinach Caesar salad.
